Spicy Cucumber Salad with Peanuts
Yield: 4 servings
2/3 cup rice vinegar
1 cup granulated sugar, coconut sugar, or honey
1 tablespoon favorite fish sauce
3 cups cucumber, thinly sliced
2 small shallots, peeled and thinly sliced
1/2 to 1 Thai chile, very thinly sliced, or to taste
2 tablespoons chopped fresh cilantro leaves
1/2 cup red bell pepper, thinly sliced (optional)
1/2 cup shredded carrot (optional)
4 tablespoons chopped, roasted peanuts
Place rice vinegar and sugar in a small saucepan and heat over medium-low heat, stirring to dissolve sugar. Add fish sauce and stir well. Remove saucepan from heat and set aside to cool slightly. Add cucumber, shallots, chile, cilantro, red bell pepper, and carrots (if using), to the vinegar mixture. Toss well to combine and let sit for at least 30 minutes. Serve salad topped with chopped roasted peanuts.
Chef Tip: This bright and spicy salad is the perfect accompaniment to any Asian main. Make the salad your own! You may substitute the Thai chile for a serrano or jalapeno pepper depending on preferred spice level. The cucumbers can be cut into large chunks, thin slices, or even ribbons using a vegetable or julienne peeler. The optional red bell pepper and carrot provide a beautiful splash of color to this simple, yet yummy salad.
