Grilled Corn Curry Salad

Yield: 4 to 6 servings

4 ears corn, yellow or white, husked

6 ounces favorite chickpeas, rinsed and drained

1 cup grape tomatoes, halved

1 red Thai chili, sliced thinly, to taste

1 bunch cilantro, chopped

1 bulb fennel, thinly shaved

1/2 medium red onion, sliced thinly

2 cups arugula

 

3/4 cup avocado oil or favorite neutral oil

2 fresh limes

1/2 teaspoon ground cumin

1 tablespoon favorite curry powder

1 teaspoon palm sugar, coconut sugar, or light brown sugar

Kosher salt, to taste

Over a hot grill or dual burner grill pan, roast the corn, turning frequently until char spots develop. Set aside to cool. Place red onions in a small mixing bowl of ice water. 

With a citrus juicer, squeeze 1-1/2 of the limes into a large mixing bowl. Slice the remaining half of lime into wedges and set aside.  Whisk the lime juice with the curry, cumin, and sugar until completely dissolved. Continue to whisk while drizzling in the oil until the dressing thickens.  Add the desired amount of chili slices. Taste and season with salt as needed.

Once corn is cool, place the cob, tapered end up, on a non-slip cutting board. Slice the kernels with a corn stripper or sharp chef’s knife.  Add to a large mixing bowl or salad bowl. Add the chickpeas, fennel, tomatoes, and a small amount of dressing to the corn and fold to combine. Add the cilantro, drained red onions, and arugula and toss together. Add additional dressing as needed. Serve with lime wedges on the side.

  • Husk corn

  • Rinse and drain chickpeas
