Don’t let that turkey go to waste—give it a fresh twist with my Curry Turkey Salad with Pecans! This recipe combines leftover turkey, crunchy pecans, a touch of curry, and creamy dressing to create a dish that’s perfect for sandwiches, wraps, or even as a stand-alone salad.

Curried Turkey Salad with Pecans

Yield: 4 servings

1/2 cup mayonnaise

1/3 cup Greek-style yogurt

4 teaspoons favorite curry powder, or to taste

2 tablespoon honey

1 tablespoon fresh lime juice - citrus press

Kosher salt and freshly ground black pepper, to taste

 

1 pound (about 2 cups) turkey meat, white and/or dark, cut into 1/2-inch pieces

1/2 cup pecan pieces, toasted

1/2 cup chopped celery

1/2 cup dried cherries or cranberries, optional

1/4 cup finely sliced green onion, white and tender green parts

1/4 cup chopped cilantro leaves, optional

 

To prepare salad dressing, combine mayonnaise, yogurt, curry powder, honey, and lime juice in a medium mixing bowl, whisking to blend thoroughly. Taste and adjust seasoning with salt and pepper.

Add turkey, pecans, celery, cherries, and green onion to a large serving bowl. Fold in the dressing gently using a silicone spatula. Garnish with cilantro and serve immediately. This salad is perfect on toasted croissant, ciabatta roll, leftover Thanksgiving rolls, or with salad greens. Also, add leftover fruit, veggies, or greens from your Thanksgiving snacking for extra crunch and flavor. Enjoy!
